As we head into spring, there seems to be an increasing amount of things to do and a decreasing amount of time to do them! It is this time of year where living slowly becomes most challenging.

In the Summer, it is easy to kick back and relax in the warm sun or by a roasting fire. Then Fall comes with colors and spices and time spent with family. Winter makes it easy to cozy up and spend the day snowed inside. But Spring… Spring is filled with change, growth, and a to-do list that gets longer by the minute.

For me, this Spring brings many joys: wedding planning, house hunting, and moving on top of normal spring excitement! These are the things I wish to slow down and enjoy, so something has to give. In my case, that often means I spend less time preparing meals… but without sacrificing healthfulness and flavor!

Who says healthy eating has to be complicated? With these muffins, it’s as easy as tossing everything into a blender and giving it a whirl. No fancy techniques or long ingredient lists required. Just blend, pour, and bake. It’s a grab-and-go breakfast solution that fits perfectly into busy mornings. Let’s get started!

Ingredients:

  • 4 medium overly ripe bananas, mashed (about 1 1/4 cups mashed)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons avocado oil
  • 1/4 cup pure maple syrup
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups whole wheat pastry flour (or flour of choosing)
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 cup blueberries

Tip: you can often get overly ripe bananas at a discounted price at grocery stores. I store up on these for muffins and to freeze for smoothies!

Instructions:

  1. Preheat the oven to 350° F. Grease or line 12 muffin tins.
  2. Blend bananas, peanut butter, avocado oil, maple syrup, eggs, and vanilla until smooth. Add flour, chia seeds, flax seeds, baking soda, and salt and blend again.
  3. Fold in blueberries until combined.
  4. Divide the batter among the prepared muffin tins. Bake for 20-22 minutes, until just set. Serve warm or enjoy later!

Tip: you can make your own peanut butter for this recipe by first using your food processer to blend about 1 cup of peanuts until smooth and creamy. I will often blend with the avocado oil for this recipe to ease the process. Then, blend with the rest of the wet ingredients and continue with the recipe!
